The Grevepesa Olive Oil Mill: Over 50 Years of Excellence in Chianti Classico
In the heart of Chianti Classico, Frantoio del Grevepesa was founded over 50 years ago by a group of farmers with the goal of transforming their members' olives into quality extra virgin olive oil and showcasing their work. Since then, the cooperative has evolved, adapting to market changes and becoming a benchmark for local olive growing, under the leadership of Filippo Legnaioli.
Innovation, quality and diversification
The Frantoio has successfully responded to the growing interest among producers and consumers in quality oil, highlighting the more than 50 Tuscan cultivars , the connection to the local area, and environmental sustainability. To meet these needs, the cooperative has diversified its pressing facilities:
- Pieralisi large line for large volumes;
- Small TEM line for small producers and “custom” processing (over 6.000 quintals processed in the last season).
Innovation also extends to sustainability: two-phase techniques eliminate the use of process water, and the separation of the olive pit from the pomace transforms waste into energy resources.
From oil to oil tourism
In 2020, the " O! Olio e Dintorni " shop opened in Greve in Chianti, selling directly to consumers and promoting the culture of extra virgin olive oil. The mill offers guided tastings and training sessions , explaining cultivars, organoleptic characteristics, and production methods, to educate visitors on how to recognize authentic olive oil.
Looking at the future
Frantoio del Grevepesa aims to expand its tourism offerings , offering guided tours, tastings , and experiential activities that allow visitors to discover every stage of oil production, from cultivars to pressing and packaging. Maintaining a strong connection to the local area while continually innovating, the cooperative transforms every visit into an opportunity for learning and engagement, offering visitors a unique experience tied to the quality, sustainability, and traditions of Chianti Classico.
