In 1972 about 100 agricultural producers from the Chianti Classico area and the countryside around Florence came together in a cooperative with the aim of promoting and protecting the environment, the flavors and traditions linked to the production of extra virgin olive oil: the cooperative "Oleificio between producers of Grevepesa". In the heart of the Chianti Classico, on the banks of the Greve river, an essential, functional, modern structure is built.

Today, with over 180 member companies, from small farms to large structured and renowned farms, Frantoio del Grevepesa has an annual production capacity of 300.000 litres of high-quality extra virgin olive oil.

The members' olive groves extend over a vast territory, between the provinces of Florence and Siena, area dedicated to the cultivation of olives and characterized by the presence of numerous cultivars: Frantoio, Moraiolo, Leccino and Pendolino - typical of the territory and more widespread - and others less known and rarer. The union of the different cultivars contributes to the uniqueness of the oils produced.

The olive harvest takes place between October and December, following the ripening times of the different cultivars, and is done manually by "stripping", often with the help of electric or pneumatic facilitators.
The pressing takes place within 12/24 hours from the harvest. The processing of the olives at the optimal moment of ripeness allows to obtain a extra virgin olive oil of absolute excellence and balance.

The rampant red lion with olive branch was the symbol of the guild of the Art of Oliandoli. In Florence, in the first half of the XNUMXth century, art was part of the guild of oil producers, oil mill operators, wholesale and retail oil sellers.


The art also included the ceraioli, the pizzicagnoli, the gardeners and, for a certain period, even the soap makers and San Bartolomeo was the protector of the guild. The oil was not only used for food purposes, but was also used in the processing of fabrics and for the lighting of houses and streets.


Piazza dell'Olio in Florence still retains the name of one of the places where the specialized market for this precious food took place.
The ancient symbol of the corporation still appears today, in a “renewed” version, in all the products of the Frantoio del Grevepesa and guarantees the quality and tradition of always and in any case according to the rules of the art…
