DESCRIPTION


Extra virgin olive oil Chianti Classico DOP it is obtained from the fruits of the olive tree of the Leccino, Frantoio, Correggiolo and Moraiolo varieties, which must be present in the olive groves, alone or jointly, in a quantity of not less than 80%. For the remaining 20% ​​there may be olive trees of three other varieties among those specified in the specification.

PRODUCTION AREA

The area of ​​production, processing and packaging of Chianti Classico DOP extra virgin olive oil extends to numerous municipalities in the province of Siena and Florence: Castellina in Chianti, Gaiole in Chianti, Greve in Chianti, Radda in Chianti throughout their territory and, in part, Barberino Val d'Elsa, Castelnuovo Berardenga, Poggibonsi, San Casciano in Val di Pesa and Tavernelle Val di Pesa


METHOD OF PRODUCTION

The olive harvest takes place directly from the plant, possibly on nets or sheets, by 31 December of each year. The olives used for the production are stored and transported to the mill in stackable crates, perforated on five sides, within three days of harvesting. Processing must begin within 24 hours of transporting the olives to the mill. Beforehand, washing is carried out with water at room temperature. The pressing must be performed in such a way as to guarantee a temperature of the olive paste during processing not exceeding 27 ° C.


FEATURES

Chianti Classico DOP extra virgin olive oil has an intense green to green color with golden hues. The smell is fruity of medium intensity and a net aroma of olive and fruity. The flavor is decidedly spicy, with a bitter aftertaste of artichoke and thistle.

HISTORY


The cultivation of the olive tree in the production area of ​​Chianti Classico DOP has a millenary tradition, documented since the mid-1716th century BC The Middle Ages represented a moment of expansion for olive growing, linked to the increase of plantations throughout Tuscany, in particular in the territories between Florence and Siena.
